Low-Carb "Fried" Pickles

Fried Pickles are making their way into tons of restaurants these days, and we couldn't be bigger fans. Not to be biased, but we love anything pickle. :D

Today we're whipping out a healthified version of these delicious appetizers and giving you Low-Carb "Fried" Pickles.

Unlike typical fried pickles, we're using an air fryer for this recipe to eliminate all the excessive oil and using an almond flour/cheese combo as the "breading" to lower the carbs!

Enough of the jazz, let's get to the recipe!

 

Ingredients:
Fried Pickle Ingredients
1/4 c Almond Flour
1/2 c Parmesan Cheese
Salt and Pepper to taste (the pickles and cheese are salty, so you may want to have a light hand with the salt!)
2 Eggs
1/2 c Milk of choice
1 jar Randy's Pickles
Ranch Dip Ingredients (mix each of the following together to make the dip!)
1/2 c Sour Cream
1/4 c Mayo
2 T pickle brine
1 T ranch seasoning

Instructions:
Combine the wet ingredients in one bowl and the dry in another. Dip the pickle spears into the almond mixture, into the eggs, and finally back into the almond mixture. Cook in an air fryer at 400 degrees for 15 minutes, or until crispy. Enjoy!
