Mac & Cheese Monday

It’s Monday, and we all know what that means. Sadly, the weekend is over and we all have to get back on the work grind. But, what better way to get through the Monday blues than with some Mac & Cheese?! We all love burgers and we all love Mac & Cheese, so why not combine the two?
This week, we’re bringing a super simple and easy Cheeseburger Mac & Cheese to you to hopefully fill your stomach, and heart, with happiness. ;)
Cheeseburger Mac & Cheese*
1 pound macaroni pasta noodles
1 pound ground beef
1 medium onion, chopped
3 tsp minced garlic
1 cup dill pickle brine
3 cups low sodium beef broth
3 T butter
1/2 c heavy whipping cream
4 cups cheddar and colby jack cheese (you can use any combination of cheese you'd like, and you can always add more cheese to make it extra cheeeeesyyyyy!)

Chopped Parsley (for garnish)
Begin by cooking the macaroni noodles according to the box. However, replace the water with the 1 cup pickle brine and 3 cups beef broth, for added flavor. While the macaroni noodles are being prepared, use another pan to saute the onions, garlic, and cook the ground beef until no longer pink.
Once the noodles are fully done, drain and add the cooked onion/garlic/beef mixture to the noodles. Keep the pot on the stove while adding in the butter, heavy whipping cream, cheese, and salt/pepper to taste. Let the macaroni continue to simmer on low until the Mac & Cheese thickens.
After the Mac & Cheese thickens to desired consistency, serve in bowls and top with chopped parsley and pickles! Enjoy!
